Coaching Agreement

These Terms & Conditions apply to 1:1 coaching services provided by Histamine Balance, operated by Louisa Reiss (“I”, “me” or “my”).

1. My coaching service

Histamine Balance provides online, one-to-one health and nutrition coaching focused on Histamine Intolerance and related dietary and lifestyle considerations.

Each coaching session includes:

  • a 45-minute online coaching session;
  • active listening and discussion of your concerns, experiences and goals;
  • lifestyle, nutrition and wellbeing guidance;
  • evidence-informed health and nutrition education;
  • practical strategies tailored to your circumstances and goals; and
  • coaching and support around behaviour change and implementation.

Before your session, you will provide some information when booking. You may also choose to complete a more detailed questionnaire sent to you by email. I use the information you provide to prepare for your session.

After your session, I will send a follow-up email summarising important points discussed and, where appropriate, providing additional educational resources.

Ongoing coaching or personalised advice by email between sessions is not included unless separately agreed.

2. My qualifications and scope of practice

I am a qualified Health & Nutrition Coach and hold a Precision Nutrition certification.

I provide health coaching and nutrition education based on my training and experience. I am not a registered health practitioner.

My coaching may include discussing symptoms and experiences that you associate with Histamine Intolerance, exploring possible dietary and lifestyle factors, and providing education about ways to investigate your individual tolerance and potential underlying causes.

I do not:

  • diagnose Histamine Intolerance or any other medical condition;
  • provide medical treatment;
  • prescribe medication;
  • claim to cure or treat Histamine Intolerance or other medical conditions;
  • provide emergency or urgent healthcare; or
  • provide services outside my training, experience or competence.

If you suspect that you have Histamine Intolerance or another health condition, I can provide education and guidance to help you understand the topic and discuss appropriate ways to investigate it. However, I cannot provide a medical diagnosis. Where appropriate, I will recommend that you consult a doctor or another appropriately qualified healthcare professional.

Where relevant, I may discuss supplements or other health-related options. This does not constitute prescribing, and you should discuss supplements, medications and other significant health decisions with an appropriately qualified healthcare professional where appropriate.

You retain the right to make your own informed decisions about your healthcare. My coaching does not replace advice, diagnosis or treatment from your doctor, dietitian or another qualified healthcare professional.

3. No guaranteed outcome

Coaching is intended to provide education, guidance and support. Individual experiences and outcomes vary, and no particular health outcome is guaranteed.

Your results may depend on a range of factors, including your individual circumstances and how you choose to implement information and strategies discussed during coaching.

4. Your responsibilities

You agree to:

  • provide information that is accurate and complete to the best of your knowledge;
  • let me know about relevant changes to your health circumstances where these may affect the coaching I provide;
  • use your own judgement when deciding whether to implement information or suggestions discussed during coaching; and
  • seek appropriate medical or other professional care when required.

Coaching is not intended for urgent or emergency health concerns. If you require urgent medical attention, you should contact an appropriate healthcare service.

5. Limitation of liability

To the extent permitted by law, I am not liable for any indirect, consequential or economic loss arising from or in connection with the coaching services, including loss of income, loss of business, loss of opportunity or other financial loss.

My coaching services are provided for educational and informational purposes and are not a substitute for medical diagnosis, treatment or professional healthcare advice. You remain responsible for your own healthcare decisions and for seeking appropriate professional advice where required.

Nothing in these Terms & Conditions excludes, restricts or modifies any rights or remedies that cannot lawfully be excluded, restricted or modified under applicable law.

6. Fees and payment

The fee for a 45-minute 1:1 coaching session is US$95 (unless you have been offered a free session).

Payment is required at the time of booking through Stripe. Your appointment is confirmed once payment has been successfully received.

All prices are stated in US dollars unless otherwise specified.

7. Cancellation and rescheduling

Cancellation

I prepare for each session in advance by reviewing the information and notes you provide and considering how I can best tailor the session to your circumstances and goals. Because this preparation takes time before your appointment, the following cancellation terms apply:

If you cancel 48 hours or more before your scheduled session, you will receive a full refund.

If you cancel between 24 and 48 hours before your scheduled session, 50% of the session fee will be retained as a cancellation fee and the remaining 50% will be refunded.

If you cancel less than 24 hours before your scheduled session, the full session fee will be retained.

Rescheduling

You may reschedule your session free of charge provided you give at least 24 hours’ notice. If you request to reschedule less than 24 hours before your session, you may do so once without charge. Any further requests to reschedule less than 24 hours before your session will incur a 50% fee.

A rescheduled appointment should be booked within 14 days of the original appointment unless otherwise agreed.

Missed appointments

If you do not attend your scheduled session and have not contacted me in advance, the full session fee will be retained.

Exceptional Circumstances

I may use my discretion to waive or reduce a cancellation or no-show fee in exceptional circumstances.

If I need to cancel

If I need to cancel or reschedule your appointment, I will offer you the option to reschedule or receive a full refund.

8. Refunds

Once a coaching session has taken place, fees are generally non-refundable simply because you are dissatisfied with the outcome or feel that the coaching did not achieve the result you hoped for.

However, nothing in these Terms & Conditions excludes, restricts or modifies any rights or remedies that cannot lawfully be excluded under the Australian Consumer Law.

My services come with guarantees that cannot be excluded under the Australian Consumer Law. Where those guarantees apply, you may have rights to remedies including a refund, cancellation or compensation depending on the circumstances.

9. Privacy

Personal information provided in connection with coaching will be collected, used and stored in accordance with my Privacy Policy.

By booking a coaching session, you acknowledge that you have been given access to the Privacy Policy.

10. Confidentiality

I will handle information you provide during coaching confidentially and in accordance with my Privacy Policy and applicable privacy laws.

There may be circumstances where disclosure is required or permitted by law. This is further outlined in the Privacy Policy.

11. Communication and follow-up

Your coaching session includes the follow-up email described in Section 1.

The coaching fee does not include ongoing email support, unlimited questions, or additional personalised advice between sessions unless this has been separately agreed.

12. Complaints

If you have a concern about the coaching service, please contact me first so that I have an opportunity to understand and address your concern.

You may also make a complaint to the NSW Health Care Complaints Commission (HCCC). Information about making a complaint is available through the HCCC.

The NSW Code of Conduct for non-registered health practitioners and the approved HCCC complaint information are also available on this website under Code of Conduct.

13. Acceptance of these Terms & Conditions

By booking and paying for a coaching session, you confirm that:

  • you have read and understood these Terms & Conditions;
  • you agree to be bound by them; and
  • you understand the nature and limitations of the coaching service.

14. Changes to these Terms & Conditions

I may update these Terms & Conditions from time to time. The version applicable to your booking will be the version available when you book your coaching session, unless a change is required by law.

15. Governing law

These Terms & Conditions are governed by the laws of New South Wales, Australia.

Any applicable rights under Australian consumer law continue to apply.

I was curious to try the viral Japanese cheesecake, so of course I had to make a version that works for a gluten-free and low histamine diet.

I even made my own graham-style crackers, but you can absolutely use any biscuits or cookies you tolerate that pair well with cheesecake.
What I used:
✨ Greek yoghurt
✨ Stevia or another sweetener (optional - skip if your biscuits are already sweet)
✨ 100% pure vanilla bean
✨ Biscuits

At the start of my low-histamine journey, meals felt limiting and boring – I survived on plain sandwiches more than I care to admit… But with a bit of creativity (and a pinch of curiosity), I slowly started to rediscover the joy of eating.
This pesto grilled-veggie sandwich is one of my absolute faves. All you need is:
✨ your favourite low-histamine bread
✨ homemade pesto (check my previous post)
✨ lettuce (❗️not everyone tolerates arugula) 
✨ grilled veggies
✨ herbs
✨ creamy goat’s cheese
I grilled my bread with a little butter before for the extra crunch.

Histaminarmes & veganes Feldsalat/Rucola-Pesto 🌿 Histaminarmes & veganes Feldsalat/Rucola-Pesto 🌿
Dieses Pesto ist schnell gemacht, braucht nur wenige Zutaten und passt perfekt zu Pasta, als Brotaufstrich oder zu Ofengemüse.
Zutaten:
✨25 g Feldsalat oder Rucola falls verträglich (ca. 2 Handvoll)
✨25 g geröstete Kürbiskerne (3 EL)
✨3 g Hefeflocken (1 gehäufter EL)
✨30 g Knoblauch-Olivenöl oder Olivenöl + frischer Knoblauch
✨1/4 TL Salz

Alles kurz verblenden - fertig ist dein Pesto.

Hefeflocken sind ein super Ersatz für Parmesan! Für eine etwas klassischere Version kannst du natürlich auch Basilikum verwenden. 
Hinweise:
* Hefeflocken sind bei Histaminintoleranz oft sehr gut verträglich. Wenn du unsicher bist, teste es separat in einer kleinen Menge.
* Falls du Knoblauch nicht verträgst, lass ihn weg. Alternativ kannst du etwas Schnittlauch ins Pesto geben, wenn das für dich passt.

🎄🎅Festlicher Hauptgang zur Weihnachtszeit – histam 🎄🎅Festlicher Hauptgang zur Weihnachtszeit – histaminarm und richtig lecker. 🎄
Salbei-Pekannuss-Hähnchen mit Wildreis & Honig glasiertem Rosenkohl
Zutaten (4 Portionen):
– 500 g Hähnchen
– 20 g frischer Salbei
– 50 g Pekannüsse
– 2 Eier
– 80g Mehl (ggf. glutenfrei)
– 100g Paniermehl (ggf. glutenfrei)
– Rosenkohl
– Wildreis
– Granatapfel
– 1 Becher Sahne (ohne Verdickungsmittel)
– Preiselbeer- oder Cranberrysoße
– Gemüsebrühe von HistaFood (Werbung – Code louisa10 für 10 % Rabatt)
– Maisstärke
– Honig
– Ghee oder Butter
– Salz
- Optional: Knoblauchpulver, Zwiebelpulver, Pippali-Pfeffer
Zubereitung :
1️⃣ Ofen auf 200 °C vorheizen.
Rosenkohl 6–7 Min. vorgaren, mit Butter/Ghee und Honig mischen und 20–25 Min. im Ofen rösten.
2️⃣ Wildreis kochen.
3️⃣ Salbei und Pekannüsse fein mixen (Konsistenz ähnlich dem Paniermehl) und mit Paniermehl vermengen. Hähnchen plattieren, erst in Mehl, anschliessend in Ei und zuletzt in der Salbei-Pekan-Mischung wenden. In der Pfanne goldbraun braten.
4️⃣ Pfanne mit Sahne ablöschen, mit angerührter Maisstärke binden und mit Gemüsebrühe und Salz abschmecken. Preiselbeersoße unterrühren oder separat servieren.
5️⃣ Mit Granatapfelkernen toppen und genießen.
Für mich der beste Beweis dafür, dass Histaminintoleranz und festliches Essen wunderbar zusammenpassen.

🎄Ein Plätzchen-Rezept meiner Ururoma – aber histam 🎄Ein Plätzchen-Rezept meiner Ururoma – aber histaminarm und glutenfrei 🍪
Ähnlich zu Linzer Plätzchen/Spitzbuben, aber mit Zuckerguss statt Puderzucker. Der Zuckerguss zieht etwas in die Plätzchen ein und gibt ihnen ein ganz tolles frisch-fruchtiges Aroma. Gleichzeitig wird die äußere Schicht schön knusprig. 
Zutaten für ca. 30 Plätzchen

Für den Teig:
✨ 360 g glutenfreie Mehlmischung mit Xanthan
✨ 150 g Zucker
✨ 1 Prise Salz
✨ 1 Prise Bourbonvanille (optional)
✨ 180 g weiche Butter
✨ 1 Ei (oder Wachteleier)
Für die Füllung:
✨ 200 g Johannisbeergelee oder Aprikosenmarmelade (z.B. von @histafood.eu )**
Für den Guss:
✨ 100 g Puderzucker
✨ 1,5 EL Verjus (z.B. vom @verjus_shop [unbezahlte Werbung])
*Meine Mehlmischung:
180 g Tapiokastärke
90 g Hirsemehl
90 g Teffmehl
3/4 TL Xanthan

❗️Xanthan ist hier entscheidend – ohne wird der Teig trocken und bröselig.

Falls du Empfehlungen zu glutenfreien Mehlen brauchst, schreib mir gern.
Anleitung
1. Trockene Zutaten mischen.
2. Butter zugeben und verkneten, bis Streusel entstehen.
3. Ei einarbeiten, zu einem geschmeidigen Teig formen.
4. Bei warmer Küche: 15-30 Minuten kaltstellen.
5. Teig ausrollen, Plätzchen ausstechen, aufs Blech legen und nochmals mindestens 15 Minuten kühlen. Ofen auf 180 Grad Ober-Unterhitze vorheizen.
6. Für 10 bis 12 Minuten backen und nach 10 min auf ein Gitter geben und abkühlen lassen.
7. Marmelade auf die Mitte eines Plätzchens geben und mit einem zweiten Plätzchen bedecken.
8. Puderzucker und Verjus verrühren und die Plätzchen von beiden Seiten glasieren.
