This Privacy Policy explains how Histamine Balance (“I”, “me” or “my”) collects, uses, stores and protects personal information when you visit my website, purchase my products, or receive coaching, subscribe to my newsletter, or otherwise communicate with me.

I take your privacy seriously and handle personal information in accordance with applicable Australian privacy law, including the Privacy Act 1988 (Cth) and the Australian Privacy Principles (APPs), to the extent they apply to my business.

2. What personal information I collect

The information I collect depends on how you interact with me. It may include:

  • your name and contact details, such as email address;
  • information you provide when contacting me or booking a coaching session;
  • answers to coaching and intake questions;
  • information about your health, symptoms, diet, lifestyle, medications and supplements where you voluntarily provide it;
  • information you provide during coaching sessions or in subsequent communications;
  • payment and transaction information;
  • information relating to purchases of my e-book or other products;
  • information contained in emails, messages or other communications you send to me;
  • website usage and technical information, such as IP address, browser and device information, pages visited, access times and interactions with my website;
  • cookie and consent information; and
  • information contained in website security and backup logs.

Some information relating to your health may constitute sensitive information under Australian privacy law. I only seek this type of information where it is relevant to providing my services or where you voluntarily provide it.

3. How I collect personal information

I collect personal information when you:

  • complete a contact form on my website;
  • subscribe to my newsletter;
  • book a coaching session through Calendly;
  • complete my optional pre-session questionnaire;
  • communicate with me by email or Instagram;
  • participate in a coaching session;
  • purchase an e-book or coaching session;
  • make a payment;
  • leave a comment or review on my website; or
  • use my website.

Some technical information is collected automatically when you visit my website, including through cookies, analytics and security tools.

I may also receive limited information from third-party services that you use to interact with my website or services, such as payment, booking, scheduling, analytics and embedded-content providers.

4. Why I collect and use personal information

I collect and use personal information for purposes including:

  • providing and managing coaching services;
  • understanding your situation and preparing for coaching sessions;
  • communicating with you about bookings, coaching and other enquiries;
  • processing payments and purchases;
  • providing and delivering e-books and other products;
  • sending newsletters where you have subscribed;
  • maintaining and improving my website;
  • understanding website usage and performance where you have consented to relevant analytics cookies;
  • maintaining website security and preventing fraud, abuse and unauthorised access;
  • maintaining backups of my website;
  • complying with legal and regulatory obligations; and
  • otherwise operating and administering my business.

I do not use health information you provide to me for purposes unrelated to providing or managing my coaching services unless you have otherwise consented or I am permitted or required to do so by law.

5. Coaching and health information

Coaching clients may choose to provide information about their health, symptoms, diet, lifestyle, medications, supplements and related experiences.

The more detailed pre-session questionnaire is optional. You can attend a coaching session without completing it and can choose what information you wish to discuss with me.

I collect health information only where it is reasonably necessary for providing my coaching services or where you voluntarily provide it.

My coaching services are not a substitute for medical diagnosis or treatment. I may recommend that you consult an appropriately qualified healthcare professional where a matter falls outside the scope of my services.

6. Information collected through bookings

Coaching sessions are booked through Calendly.

Calendly may collect information such as your name, email address, booking details, answers to booking questions and technical information required to operate the scheduling service.

Calendly may also use cookies and similar technologies in connection with its booking functionality. Cookie handling on my website is managed through my cookie-consent system where applicable.

7. Information collected during coaching sessions

Coaching sessions are conducted using Google Meet.

Google may process information such as your name and email address, meeting date and time, and technical information associated with the video meeting service.

I do not record coaching sessions.

Information you voluntarily share during a session may become part of your client information and may be retained as described in this Privacy Policy.

8. Client information and records

Information you voluntarily provide through coaching sessions, emails, intake forms or other communications may be retained as part of your client records.

This may include information relating to your health, nutrition, lifestyle, symptoms and experiences.

I store relevant client information securely using appropriate access controls and security measures, including multi-factor authentication to protect it against unauthorised access, loss, misuse or disclosure.

I only retain information for as long as reasonably necessary for the purposes for which it was collected, including providing services, maintaining appropriate business records and meeting legal obligations.

9. Email communications

If you contact me by email, I may retain your name, email address and the contents of your correspondence.

Emails are handled through Sideground and Gmail / Google Workspace.

If you voluntarily include health or other sensitive information in an email, that information may become part of your client or enquiry records.

10. Newsletter

If you subscribe to my newsletter, I collect your name and email address and use this information to send you the newsletter and related communications.

Newsletter subscriptions are managed through Mailchimp.

You can unsubscribe at any time using the unsubscribe link included in my emails.

11. Payments and purchases

Payments for coaching sessions booked through Calendly are processed through Stripe.

Payments for e-books purchased through my website are also processed through Stripe.

Depending on the transaction, Stripe may process information such as your name, email address, payment details, billing information, transaction information and technical or fraud-prevention information.

I do not receive or store your full card number or card security code.

12. Website analytics and cookies

My website uses cookies and similar technologies.

I use CookieYes to manage cookie consent and preferences.

Where you consent to analytics cookies, Google Analytics may collect information such as:

  • pages visited;
  • interactions with the website;
  • approximate location;
  • browser and device information;
  • cookie identifiers; and
  • other website usage information.

I also use cookies and similar technologies associated with embedded services such as YouTube and Calendly.

You can manage your cookie preferences through the cookie-consent mechanism provided on my website.

13. Embedded content and social media

My website may contain embedded content from third parties, including YouTube and Instagram.

YouTube

I use YouTube’s privacy-enhanced embedding option where available. Depending on your interaction with embedded content and your cookie choices, YouTube / Google may process technical information and use cookies or similar technologies.

Instagram

I use the Smash Balloon plugin to display selected public Instagram content on my website.

When embedded Instagram content is requested from Meta’s servers, Meta may receive technical information such as your IP address and information about your interaction with the content.

Information you voluntarily send to me through Instagram may also be processed by Meta and may, where relevant, be transferred into my client records.

I do not ask people to provide detailed health information through Instagram and may redirect enquiries involving sensitive information to more appropriate communication channels.

14. Website security

My website is hosted by Sideground.

Website hosting and security processes may involve technical information such as IP addresses, browser and device information, access times, requested pages, login attempts and other information used to maintain website security and prevent attacks.

I use Wordfence to help monitor and protect my WordPress website against security threats. Wordfence may process technical and security information, including IP addresses and information about attempted or blocked activity.

15. Website backups

I use UpdraftPlus to create backups of my website.

Backups may contain website files and the WordPress database, which can include information submitted through website forms and other information stored in WordPress.

Backups are stored using Google Drive.

16. Website comments and reviews

If you submit a comment or review on my website, I may collect information such as your name or display name, email address and the content of your comment or review.

This information is processed through WordPress and may be publicly displayed where you submit content intended for publication.

17. Third party providers I use

I use a number of third-party service providers to operate my website and business. Depending on how you interact with me, your personal information may be processed by:

  • Sideground – website hosting;
  • WordPress – website content management;
  • WPForms – website contact forms;
  • Gmail / Google Workspace – email and business communications;
  • Google Calendar – coaching scheduling;
  • Google Meet – coaching sessions;
  • Google Analytics – website analytics where consent is provided;
  • Google Drive – website backups;
  • Calendly – coaching bookings and scheduling;
  • Mailchimp – newsletter management;
  • Stripe – payment processing;
  • CookieYes – cookie consent management;
  • Wordfence / Defiant – website security;
  • UpdraftPlus – website backups;
  • YouTube / Google – embedded video content;
  • Meta / Instagram – social media and embedded Instagram content; and
  • Smash Balloon – displaying public Instagram content on my website.

I do not sell your personal information.

I do not disclose your health information to third parties for their marketing purposes.

I may disclose personal information where required or authorised by law, where necessary to protect my rights or the security of my services, or where reasonably necessary for the purposes described in this Privacy Policy.

18. Overseas disclosure

Some of the service providers I use may store or process personal information outside Australia.

Depending on the service, information may be processed in countries including the United States, United Kingdom and other countries where my service providers or their service providers operate.

Where required by applicable Australian privacy law, I take reasonable steps when selecting and using service providers to address the privacy and security of information disclosed overseas.

Because third-party providers may change their infrastructure and processing locations, their current privacy policies and data-processing arrangements may also apply.

19. How I protect personal information

I take reasonable steps appropriate to the circumstances to protect personal information from misuse, interference, loss, unauthorised access, modification or disclosure.

These measures include using reputable service providers, password protection and account security measures, access controls, secure cloud storage and security monitoring for my website.

No method of storing or transmitting information over the internet can be guaranteed to be completely secure.

20. How long I keep personal information

I retain personal information only for as long as reasonably necessary for the purpose for which it was collected, to provide my services, maintain appropriate business records, resolve disputes, maintain security and comply with legal obligations.

Different types of information may therefore be retained for different periods.

When information is no longer required, I take reasonable steps to securely delete or de-identify it where appropriate.

21. Accessing and correcting your information

You may request access to personal information I hold about you.

You may also ask me to correct information that you believe is inaccurate, out of date, incomplete, irrelevant or misleading.

I will respond to your request within the timeframe required by applicable privacy law. I may need to verify your identity before providing access to personal information.

In some circumstances, I may be permitted to refuse access or correction. If this happens, I will explain the reasons where I am legally able to do so.

22. Privacy complaints

If you believe I have mishandled your personal information or breached applicable privacy law, please contact me first using:

Please provide enough information for me to understand and investigate your concern.

I will acknowledge and investigate your complaint and respond within a reasonable period.

If you are not satisfied with my response, or if you do not receive a response within the applicable timeframe, you may contact the Office of the Australian Information Commissioner (OAIC) at oaic.gov.au .

23. Your choices

Where practical, you may choose not to provide personal information.

However, some information is necessary to provide particular services. For example, I cannot process a coaching booking without sufficient information to identify you and arrange the appointment.

The optional pre-session questionnaire does not need to be completed in order to receive coaching.

You can also unsubscribe from marketing communications at any time.

24. Changes to this Privacy Policy

I may update this Privacy Policy from time to time to reflect changes to my business, services, technology, legal requirements or the way personal information is handled.

The current version will be published on my website with the date of the most recent update, which you can find on the top of this page.

I was curious to try the viral Japanese cheesecake, so of course I had to make a version that works for a gluten-free and low histamine diet.

I even made my own graham-style crackers, but you can absolutely use any biscuits or cookies you tolerate that pair well with cheesecake.
What I used:

This pesto grilled-veggie sandwich is one of my absolute faves. All you need is:
✨ your favourite low-histamine bread
✨ homemade pesto (check my previous post)
✨ lettuce (❗️not everyone tolerates arugula)

✨ creamy goat’s cheese
I grilled my bread with a little butter before for the extra crunch.

Histaminarmes & veganes Feldsalat/Rucola-Pesto 🌿 Histaminarmes & veganes Feldsalat/Rucola-Pesto 🌿
Dieses Pesto ist schnell gemacht, braucht nur wenige Zutaten und passt perfekt zu Pasta, als Brotaufstrich oder zu Ofengemüse.
Zutaten:
✨25 g Feldsalat oder Rucola falls verträglich (ca. 2 Handvoll)
✨25 g geröstete Kürbiskerne (3 EL)
✨3 g Hefeflocken (1 gehäufter EL)
✨30 g Knoblauch-Olivenöl oder Olivenöl + frischer Knoblauch
✨1/4 TL Salz

Alles kurz verblenden - fertig ist dein Pesto.

Hefeflocken sind ein super Ersatz für Parmesan! Für eine etwas klassischere Version kannst du natürlich auch Basilikum verwenden. 
Hinweise:
* Hefeflocken sind bei Histaminintoleranz oft sehr gut verträglich. Wenn du unsicher bist, teste es separat in einer kleinen Menge.
* Falls du Knoblauch nicht verträgst, lass ihn weg. Alternativ kannst du etwas Schnittlauch ins Pesto geben, wenn das für dich passt.

🎄🎅Festlicher Hauptgang zur Weihnachtszeit – histam 🎄🎅Festlicher Hauptgang zur Weihnachtszeit – histaminarm und richtig lecker. 🎄
Salbei-Pekannuss-Hähnchen mit Wildreis & Honig glasiertem Rosenkohl
Zutaten (4 Portionen):
– 500 g Hähnchen
– 20 g frischer Salbei
– 50 g Pekannüsse
– 2 Eier
– 80g Mehl (ggf. glutenfrei)
– 100g Paniermehl (ggf. glutenfrei)
– Rosenkohl
– Wildreis
– Granatapfel
– 1 Becher Sahne (ohne Verdickungsmittel)
– Preiselbeer- oder Cranberrysoße
– Gemüsebrühe von HistaFood (Werbung – Code louisa10 für 10 % Rabatt)
– Maisstärke
– Honig
– Ghee oder Butter
– Salz
- Optional: Knoblauchpulver, Zwiebelpulver, Pippali-Pfeffer
Zubereitung :
1️⃣ Ofen auf 200 °C vorheizen.
Rosenkohl 6–7 Min. vorgaren, mit Butter/Ghee und Honig mischen und 20–25 Min. im Ofen rösten.
2️⃣ Wildreis kochen.
3️⃣ Salbei und Pekannüsse fein mixen (Konsistenz ähnlich dem Paniermehl) und mit Paniermehl vermengen. Hähnchen plattieren, erst in Mehl, anschliessend in Ei und zuletzt in der Salbei-Pekan-Mischung wenden. In der Pfanne goldbraun braten.
4️⃣ Pfanne mit Sahne ablöschen, mit angerührter Maisstärke binden und mit Gemüsebrühe und Salz abschmecken. Preiselbeersoße unterrühren oder separat servieren.
5️⃣ Mit Granatapfelkernen toppen und genießen.
Für mich der beste Beweis dafür, dass Histaminintoleranz und festliches Essen wunderbar zusammenpassen.

🎄Ein Plätzchen-Rezept meiner Ururoma – aber histam 🎄Ein Plätzchen-Rezept meiner Ururoma – aber histaminarm und glutenfrei 🍪
Ähnlich zu Linzer Plätzchen/Spitzbuben, aber mit Zuckerguss statt Puderzucker. Der Zuckerguss zieht etwas in die Plätzchen ein und gibt ihnen ein ganz tolles frisch-fruchtiges Aroma. Gleichzeitig wird die äußere Schicht schön knusprig. 
Zutaten für ca. 30 Plätzchen

Für den Teig:
✨ 360 g glutenfreie Mehlmischung mit Xanthan
✨ 150 g Zucker
✨ 1 Prise Salz
✨ 1 Prise Bourbonvanille (optional)
✨ 180 g weiche Butter
✨ 1 Ei (oder Wachteleier)
Für die Füllung:
✨ 200 g Johannisbeergelee oder Aprikosenmarmelade (z.B. von @histafood.eu )**
Für den Guss:
✨ 100 g Puderzucker
✨ 1,5 EL Verjus (z.B. vom @verjus_shop [unbezahlte Werbung])
*Meine Mehlmischung:
180 g Tapiokastärke
90 g Hirsemehl
90 g Teffmehl
3/4 TL Xanthan

❗️Xanthan ist hier entscheidend – ohne wird der Teig trocken und bröselig.

Falls du Empfehlungen zu glutenfreien Mehlen brauchst, schreib mir gern.
Anleitung
1. Trockene Zutaten mischen.
2. Butter zugeben und verkneten, bis Streusel entstehen.
3. Ei einarbeiten, zu einem geschmeidigen Teig formen.
4. Bei warmer Küche: 15-30 Minuten kaltstellen.
5. Teig ausrollen, Plätzchen ausstechen, aufs Blech legen und nochmals mindestens 15 Minuten kühlen. Ofen auf 180 Grad Ober-Unterhitze vorheizen.
6. Für 10 bis 12 Minuten backen und nach 10 min auf ein Gitter geben und abkühlen lassen.
7. Marmelade auf die Mitte eines Plätzchens geben und mit einem zweiten Plätzchen bedecken.
8. Puderzucker und Verjus verrühren und die Plätzchen von beiden Seiten glasieren.
